Carrot cake and chickpea meringue

Hi all! I'm still busy but I'm just popping in for a bit to talk about some baking I've done...



I baked this carrot cake a few weeks ago, using this recipe from "Hell Yeah Its Vegan". I made a buttercream icing and left out the raisins, and it turned out really well.



Excuse the weird pictures, but I made this chickpea meringue recipe from "Seitan Beats Your Meat". They were supposed to be piped little marshmallows, but the mixture was so thick that it is hard to pipe! I've never really liked meringue and love marshmallows, so I was hoping that they would be more like the latter than the former. I was disappointed :( They were very light, the shell was crispy and then with one bite they melted weirdly into my teeth.

  1. I was reading about the chickpea meringue on the ppk forum ... good to see that it works reasonably well if tasting slightly unexpected.
