I have been on a bit of an ice cream kick recently, despite the cold weather. I had some matcha (green tea) powder lurking around and thought it would make a nice ice cream flavour. Give it a try if you like your green tea!
Recipe (Based on this recipe from the Minimalist Baker):
3 tablespoons of matcha powder
1 tin of coconut milk
1 cup/240-250mls of non-dairy milk (I used plain, unsweetened soya milk)
3-4 tablespoons of agave syrup (adjust to taste, depending on if you use a sweetened milk etc)
Blend all of the ingredients together and churn through an ice cream maker until it thickens into a soft ice cream (about 20-30 minutes, keep an eye on it because my guess is that every ice cream maker is different). Put in a shallow container in the freezer and freeze until solid.
After that, let your imagination be your guide... I had mine with some melted white chocolate, just for fun. :)
