Before I was vegan, I was a lacto-ovo vegetarian for four years, with a definite emphasis on the lacto-ovo rather than on the vegetarian!. My favourite sandwich filling was cheese and egg-mayonnaise with onion. When I first went vegan I made many tofu-mayonnaise sandwiches with just tofu and vegan mayonnaise but as I learned to cook (and discovered houmous!) my sandwiches got a bit more creative.
Now I have rediscovered a delicious, more elaborate version of
vegan egg-mayonnaise on the Mouthwatering Vegan blog. The secret is the vegan yolk. I was instantly drawn to this recipe for a vegan egg-yolk as I had all of the ingredients on hand (no expensive
Vegg needed!).

What a perfectly yummy sandwich, my favourite sandwich when I was pescetarian was tuna mayo with cheese and now I wanna re-create that!
