Shepherd's pie is a pretty traditional dinner that I make fairly frequently, and is something that's very adaptable to what you have lying around. Boil any beans, lentils, vegetables, seitan, TVP or tempeh in a savoury sauce and you have a filling. Top it with mashed potatoes and put it in the oven for about 20 minutes at 180 degrees and magic happens!
The filling of this one is TVP, butterbeans, peas, chard and onions. The topping is mashed potato mixed with some Tofutti herb and chive cream cheese, just because it was in the fridge.
