Vegan jaffa cakes

I never had Jaffa Cakes in my pre-vegan days, so I made them purely out of curiosity rather than nostalgia. I like orange and I like chocolate so I figured it couldn't go too far wrong! I used this non-vegan recipe as a basic guideline, making the necessary vegan adaptations.

So yummy I couldn't wait for the chocolate to harden completely!

A few simple adaptations... 
Sponge- I used half of the basic golden vanilla cake recipe (without the vanilla) from 'Vegan Cupcakes Take Over The World', which I baked for 15 minutes at 180°C.
Jelly- I couldn't find vegan orange jelly in the supermarket (gelatine and carmine... ughh) so I made my own with orange juice and Dr Oetker Vege-gel, following the instructions on the packaging.
