Surprise marshmallows and Rocky Road

Last week I recieved this delightful packet of vegan marshmallows in the post. Don't you love parcels! They were sent to me as an exceedingly generous present by a fellow member of the forum I frequent, veganforum.com. A throw-away comment about how I hadn't had marshmallows since my pre-vegetarian days (I know that there are vegan ones available but even if the companies that make them do ship outside of the US or UK it's quite difficult to justify the shipping costs) lead to a very kind offer to have some sent to me, which I gladly accepted!


Once they arrived, the difficult part was deciding what to do with them!
The theme of many a vegan blog post seems to be the idea of veganising favourites from childhood, but seeing as my favourite thing to do with marshmallows as a child was to just eat them straight out of the bag, I decided that these precious marshmallows deserved more.
My first thought was Rocky Road as I had never had it before and it seemed a suitably decadentway to use such valuable marshmallows!

My research suggested that biscuit + chocolate + marshmallow = Rocky Road, so I melted some dark chocolate, mashed up some Specloos biscuits and combined them with the marshmallows before leaving them to harden up in the fridge for about an hour or so. Once set, it can be cut into slices or just dug into with a fork! Delicious, amazing, there are so few adjectives fitting to such a perfect combination, I was well impressed! The marshmallows were slightly softer than I remember marsmallows being but were still delectable with a delicious hint of vanilla!

  1. That's so cool that somebody sent those to you! :) I've never actually tried a vegan marshmallow, but I've always hoped to stumble across them when shopping. How do they taste differently from regular marshmallows?

  3. Thanks for the comments guys! Yeah I know, I was very lucky! What I love about being a vegan is that it gives you a new appreciation of food, cruelty-free tastes better! Lori, they don't taste that different, they were slightly softer than I remember non-vegan marshmallows being but apart from that they're pretty similar. I'm sure it varies by brand. Good luck, I hope you do stumble across them some day :D
