Homemade almond and spirulina energy Bounce-style Balls

I've recently acquired a taste for Spirulina-ginseng bounce balls. They're the perfect little ball of nutty super-fooded joy to get you over the 3pm slump. However, like all great things they're expensive, €2.50 for one little ball.
So I thought, why not have a go of making them myself?
Well obviously my kitchen staples don't include ginseng and fo-ti root but once I established that the main tastes were of almond and vanilla I knew I could make something similar.

Vanilla essence, almond butter, carob powder, almonds, fruit sweetener and some spirulina powder. Yes the spirulina powder was a bit of an investment, came in just under €10 for 100g but you only use a tiny bit at a time.

I ground a handful of nuts into a powder, soaked about six or seven dates, added in a teaspoon each of almond butter, carob and spirulina, a cupful of vanilla essence, a little squeeze of sweetener and held on tight to the mini-chopper! The result were balls of tasty blue-green goodness!
You could roll them in some chopped, roasted nuts to make them look more like their inspiration but I didn't have any and the nut butter gives it that roasted nut taste.

I made some with almonds (and almond butter) and some with cashews (and cashew butter). They both taste equally as good! Its a versatile recipe, you can put in anything really. Experiment, go wild!
